Sparkling Raspberry Lemonade continues summer ‘feels’
Drag summer out with this recipe refreshing, poolside worthy drink.
Ingredients:
● 1 cup of freshly squeezed lemon juice, chilled preferably
● 12 oz. of fresh raspberries
● 1⁄2 cup of cold water
● 1⁄2 cup of granulated sugar
● 1⁄2 cup of honey
● 1 liter bottle of either sparkling water or club soda
● fresh mint
● 1 whole lemon
Directions:
1. Gently wash your raspberries and set some aside for later.
2. With a food processor pulse the raspberries into a nice purée. 3. Once the purée is finished, press the purée into a fine mesh strainer and catch juice in a bowl.
4. In a large pitcher, combine your cold water and sugar and whisk until all of the sugar has dissolved.
5. Add honey and stir mixture until well blended.
6. Slowly incorporate raspberry purée and lemon juice.
7. Mix in club soda. Serve cold and enjoy!
For garnish:
Wash and slice the lemon add to your pitcher along with the previously washed raspberries and mint sprigs.
