Butternut Squash Mac n’ Cheese

I am so glad that it is finally feeling like fall. I haven’t always lived in Florida, so having fall arrive so late is surprising. Thankfully, after the long wait, temperature has begun to drop. So, consequently, I broke out my sweaters and fall recipes.
I’ll take it though.

There is only one side note: Now is the time to enjoy your fall recipes. I have been putting this particular recipe on the back burner for quite some time. Butternut Squash, though having its own appeal, did not seem like something I should try in the summer. This vegetable is a strict fall ingredient. I was not about to break the laws of cooking.

So here I finally am, ready to attempt this new challenge. I should let you know that I have not tried this particular recipe yet, and am new to cooking with butternut squash. Though I guess there is not a better time to embark on this journey.

 

Some things to keep in mind…

1) This can be made with pumpkin!

2) This recipe is actually cheese free so it is vegan friendly!

3) I am really excited to try this recipe!
I started off by shopping for the necessary ingredients. To my surprise, I had most of them. The only items on my grocery list was butternut squash, more garlic powder, kale, and Earth Balance.

The cooking was a breeze. I choose the option to use fresh butternut squash, rather than canned squash, and roasted it in the oven. The outcome of the first step in itself was delicious.

 

The rest of the recipe was very easy for me to follow. The Oh She Glows website (which can be found below) even provided a near step by step picture for those who prefer to learn visually. I myself mostly stayed to the written directions.

At the end of the recipe I decided to add in some of the left over roasted butternut squash to add some more texture. Like the recipe recommended, I also added in some greens. I chose kale. However I then took another direction and decided to sprinkle some bread crumbs over the masterpiece.

The recipe was delicious. I will definitely be trying this recipe out again! Despite not having any cheese, the pasta dish did not lack in flavor. However, including the nutritional yeast, the outcome strangely resembles the childhood favorite: Mac n’ Cheese, only this recipe adds in the sweet distinct flavor of butternut squash. I’d give this one 4.7/5 stars.
