Recipe Review: Vegan Lasagna
Transitioning to Veganism has not been as difficult as most would think, considering for the past 1 and a half years I’ve been vegetarian. Recently the lasagna craving has begun to hit. For the most part many nonvegan dishes can be easily transformed into dairy and meat free. However, many places do not offer vegan lasagna items. So if this dish is being craved, the only way to obtain it is to go ahead and cook it. So I searched my favorite vegan bloggers recipes, ohsheglows.com, and sure enough found a vegan lasagna recipe.
Taste- 5/5
This recipe was definitely a keeper. Despite being cheese and meat free, the use of the cashew cheese added an interesting element to the taste. Though I enjoyed the previous meat and cheese lasagna recipe my mom would make a little more, the Vegan Lasagna with Basil Cashew Cheese by oh she glows offered a great alternative. The taste is unique and highly delicious. Next time I make the recipe I would rather remove the diaya cheese. The cheese sauce offered enough cheesiness, so the extra shredded cheese was a bit too much. So rather than topping off with the diaya cheese, a vegan cheese option, try topping the lasagna with another layer of noodles and more pasta sauce.

The basil cashew cheese portion of the recipe could possibly work as a ricotta substitute. Though it doesn’t taste like ricotta, it offers a similar consistency as well as an interesting taste. Experimenting with the cashew cheese, I was able to make an easy stuffed shells recipe. All it used was the cheese, diaya vegan mozzarella cheese and spinach.
Difficulty- 3/5
For someone not used to cooking, this recipe may seem difficult, and it might be to some. Especially as someone who enjoys cooking the recipe was not difficult at all. However the difficlulty rating it due to the patience the recipe requires. Considering the cashews must sit in a bowl of water for either 30 minutes or overnight, it is necessary to wait and be patient. Also due to the many components in the recipe it might take even longer than the expected cook time for some.
Visual Appeal- 5/5
In the end, the recipe turned out beautifully. Combined with the smell it was absolutely divine. The recipe is ideal for summer or spring with the use of the zucchini and other vegetables.
